- comments: instructed to provide and maintain handwashing signage at handsink at front coffee preparation area.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed black and pink slimy substances on interior water components of the ice maker,dripping into ice 'ice is used for human consumption'. Management was instructed to turn off machine, remove ice and have interior of ice machine cleaned and sanitized and maintain. Priority foundation violation 7-38-005,citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed the 3 door prep line cooler with an air temperature of 47. 1f. No (tcs foods) were found in mentioned cooler at this time of inspection. Instructed manager cold holding unit must maintain cold holding temperature of 41. 0f or colder. Instructed to repair prep line cooler tagged 'held for inspection' at this time. Instructed not to use until repaired. See comments below. Priority violation 7-38-005,no citation issued.
36. Thermometers provided & accurate
- comments: instructed to provide and maintain a visible adequate working thermometer for small refrigerator behind the front counter service area.
37. Food properly labeled; original container
- comments: observed bulk container in rear without a label. Instructed to provide the common name on all bulk containers to properly identify item (salt, sugar, flour etc).
41. Wiping cloths: properly used & stored
- comments: instructed to properly store all washcloths in a sanitizing solution especially when not in use.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed stained cutting board on top of the 3-door prep line cooler. Instructed to resurface or replace the cutting boards.
55. Physical facilities installed, maintained & clean
- comments: instructed to detail clean and organize utility mop sink room and remove unnecessary articles due to potential pest harborage and elevate mops,brooms cleaning equipments off the floor at least 6' inches to facilitate cleaning. (no milk crates to be used for elevation).
