- comments: found tcs food at improper temperature in 2 door cold holding unit in main prep area: 12# of cooked chicken wings at temp of 78. 8f; 10# of cooked beef at temp of 49. 8f, 12# of ground pork at temp of 51. 8f and sliced tomatos at 50. 2f mentioned stored products were inside 2 door cold holding cooler. Cold hold unit has ambient air temp of 41. 6f. Food discarded and denatured by employee. 34 pounds 250. 00 value priority violation:7-38-005, citation issued.

- comments: observed walk-in cooler on 1st floor rear prep area at an improper temperature 53. 8f walk in cooler tagged during inspection. Facility is not allowed to use unitl units are at proper cold-holding temps under 41f. Must contact the office of cdph for tag removal request when repaired/replaced. Pounds discarded and denatured by manager 100 pounds & value of 1,000. 00 priority violation. Citation issued. 7-38-005.
