- comments: observed tcs foods held at improper internal temperatures in the rear prep cold holding unit, such as 10lbs of chicken at 50. 5f. The manager discarded and denatured a total of 10 lbs at $100. All cold tcs food must maintain 41f or below. Priority violation. Citation issued 7-38-005.

- comments: observed facility equipment for cold holding in disrepair. Noted reach in prep cooler to be at improper at 51. 5f. Informed person in charge to repair or replace for proper cold holding of 41 degrees f or below. Tagged unit. Priority violation #7-38-005. Citation issued.

- comments: observed milk crates being used as shelving throughout the prep and storage areas. Must remove and provide shelving 6' off the floor and provide floor accessibility to ensure adequate facility cleaning.

- comments: observed clutter stored on the floor at side storage areas near restrooms. Instructed manager to remove all unused articles and equipment to prevent pest harborage.

Instructed manager to clean floors under all equipment, along walls, and in all corners in all areas. Observed dust buildup on the fan in the walk-in cooler and ceiling and wall vents in prep and storage areas.

- comments: previous core violation from report #2582786 on 10/3/23 was not corrected:40-observed 2 female and 1 male food employee working without hair restraints. Instructed to provide. 47 observed torn gaskets on the prep cooler and prep freezer. Instructed to repair or replace and maintain in good condition. Priority foundation 7-42-090. Citation issued.
