- comments: we observed no sanitizing solution provided at low temp dish machine in prep/and dishroom areas. Multi-use utensil were washed. Unit was set up. No sanitizing solution is provided on site. Instructed to set three compartment sink to wash, rinse and sanitize for all dishware. Dish machine tagged held for inspection "do not use" contacted c. D. P. H. For re-inspection and tag removal. Priority violation 7-38-025. Citation issued. Upon return of 1-13-25, sanitizing solution for the above unit was provided. Presently maintain 100ppm. Untagged unit and use it. Priority violation 7-38-005

- comments: previous core violations not corrected from 12-7-2023,report#: 2586505 #37) 3-302. 12: observed bulk food containers with sugar and salt without labels in the rear dry storage area. Instructed the person in charge to provide labels with containing foods name on all food containers. Must label food storage containers when food is not in its original packaging. #47)4-202. 16: observed aluminum foil being used as a liner on shelving units and prep tables at the main cookline. Instructed the person in charge to remove aluminum foil and ensure all nonfood-contact surfaces remain smooth and easily cleanable. #55)6-501. 11: (observed damaged and missing ceiling panels throughout prep areas- also observed a hole in the ceiling near the rear exit door. Instructed the person in charge to repair damaged ceiling tiles. Smoothly seal the hole in the ceiling near the rear exit door and maintain. Priority foundation violation:7-42-090,citation issued.
