- comments: observed no valid/original certifications for the certified food manager. Instructed manager to provide the original certifications. Copies are not accepted. Priority foundation. 7-38-012. Citation issued.
3. Management, food employee and conditional employee; knowledge, responsibilities and reporting
- comments: observed no employee health policy on site as required; must provide. Instructed the person in charge to provide documentation of employees responsibility to report any illness transmissible through food. Priority foundation 7-38-010
10. Adequate handwashing sinks properly supplied and accessible
- comments: observed no paper towels or sanitary hand drying devices at hand washing sink in prep area, in toilet room and at handsink in rear near 3 compartment sink. Instructed manager to provide. Priority foundation. Citation issued 7-38-030(c).
22. Proper cold holding temperatures
- comments: observed tcs foods held at improper internal temperatures in the front prep cold holding unit, such as 3lbs of sliced tomatoes at 50. 9f,. 5 lb of tatziki sauce. Manager discarded and denatured a total 3. 5lbs at $10. All cold tcs food must maintain 41f or below. Priority violation. Citation issued 7-38-005.
36. Thermometers provided & accurate
- comments: observed no thermometers in reach-in coolers in front serving and prep areas. Instructed manager to provide thermometers in all coolers.
37. Food properly labeled; original container
- comments: observed sauces in unmarked bottle containers in front prep area. Instructed manager to label all containers when not in the original package.
38. Insects, rodents, & animals not present
- comments: observed a few flies in rear of facility while back door was open. Instructed manager to monitor entrance of pests while deliveries are made and trash is removed. Manager contacted pest control company.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed accumulated/encrusted dirty rubber gasket on doors of reach coolers in in the front prep area. Instructed to clean or replace gasket.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed no covered waste receptacle in toilet room. Instructed manager to provide and maintain.
