Instructed person in charge, a certified food manager with city of chicago foodservice sanitation certificate must be present at all times that time/temperature control for safety (tcs) food is being prepared, held for service, or served. Priority foundation violation 7-38-012 citation issued

Instructed the person in charge to remove aluminum foil and cardboard from shelves and prep tables and ensure all nonfood-contact surfaces remain smooth and easily cleanable. #51 - observed slow draining exposed handsink near the compartment sink in the rear prep area. Instructed the person in charge to repair so that handsink drains properly and maintain. #55 - observed food debris on floors throughout prep area and in the walk-in freezer. Instructed the person in charge to detail clean floors and maintain. #57 - observed multiple food handling employees without food handler training certificates at inspection time. Instructed the person in charge to ensure all food handling employees obtain food handler training to comply with idph food handler requirements. #58 - observed one certified food service manager without allergen awareness training certificate at the time of inspection. Instructed the person in charge to ensure that all individuals that have a city of chicago food service manager certificate obtain allergen awareness training and receive allergen awareness certificate.
