- comments: unknown source of cooked jerk chicken, cooked pot roast, and ground beef on site. No invoices on site or proof of source. All product discarded and denatured at this time. Approx 10lbs $50 value. Citation issued 7-38-005 priority. Instd to have proof of source on site at all times.

Must detail clean the interior of all cooking equipment to remove food debris. Also clean dry storage shelving to remove dust and debris. 49 4-602. 13: nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
