Report date: Feb 3, 202513. Food in good condition, safe, & unadulterated
- comments: observed pork belly in walk in cooler with white and blue mold. Approximately 3 lbs valued at $20. Person in charge discarded and denatured product. Priority violation 7-40-050(a) citation issued
16. Food-contact surfaces: cleaned & sanitized
- comments: noted concentration level of sanitizing solution in sanitizing compartment of set up/in use 3 compartment sink with solution measured at 0 ppm. Instructed management to always verifify sanitizing solution and correct ppm is dispensed when setting up the 3 compartment sink. Person in charge immediately emptied compartment, refilled basin and found that the sanitizing solution is not being dispensed properly. Instructed to manually add the sanitizer to the correct ppm or use low temperature dishmachine for wash, rinse and sanitizing until dispenser at sink is serviced. Priority violation #7-38-025. Citation issued.
23. Proper date marking and disposition
- comments: observed ready-to-eat, time/temperature control for safety (tcs) foods (cooked rice, cooked black and pinto beans, pico de gallo, sliced limes, paneer cheese to indicate the product's name and date in which the food must be sold, discarded or consumed within 7 days of preparation. Also noted par cooked ground beef, steak, chicken tinga, instructed to provide proper labels for date marking and discard date for refrigerated, ready-to-eat, tcs foods held over 24hrs placed in all cold-holding units. Person in charge discarded and denatured approx. 70 lbs valued at $270 priority foundation violation #7-38-005. Citation issued
41. Wiping cloths: properly used & stored
- comments: observed orange wiping cloths on cutting board attached to deli cooler in kitchen. Instructed to properly store wiping cloths in a sanitizing solution between uses to prevent contamination of food and food contact surfaces.
51. Plumbing installed; proper backflow devices
- comments: was not able to locate the backflow prevention device on waterline connected to lobby drink dispenser. Instructed to provide and maintain.
55. Physical facilities installed, maintained & clean
- comments: noted excessive dust build up on male and female guest/employee bathroom vents. Instructed to clean and maintain.
57. All food employees have food handler training
- comments: observed no proof of training for all food handlers. Instructed to provide and maintain records at all times.
60. Previous core violation corrected
- comments: noted continued non-compliance from report #2589324 conducted on 2/07/24. Previous core violations not corrected: (37) food bulk containers not labeled. Instructed manager must label all bulk containers and maintain. (58) no food allergen training certificates on premises. Instructed all city of chicago certified food managers must have food allergen training certificates. Must correct core violations by the date on the report. Priority foundation violation #7-42-090. Citation issued.
