Report date: Aug 7, 202422. Proper cold holding temperatures
- comments: observed the following cold-held tcs foods found at improper temperatures during the time of inspection, all stored in multiple cooling units on the premise. . . They are as follows, approximatley 4 lbs macaroni salad with chopped ham @ 59f, 2 lbs potato salad, 6 lbs sliced watermelon @ 72f, 5 lbs menudo @59f 9 lbs cooked potatoes ranging between 49-52f, 6lbs various housemade salsas ranging between 48-59f, 2 lbs sour cream, 2 lbs hard boiled eggs @62f. All said items were voluntarily discarded at this time by pic. Instructed to hold all cold-held tcs foods @41f and below at all times. Priority violation. #7-38-005. Citation issued.
38. Insects, rodents, & animals not present
- comments: observed approximately 35 small live black flies flying throughout unused seating/storage area, near beverage dispenser nozzles, on surfaces of wired rack containing cups and plates, inside toilet room for employees, on exterior surfaces of ice machine throughout seating space. Instructed to contract pest control for service. Must eliminate fly activity. Priority foundation violation. #7-38-020 (a). Citation issued.

- comments: observed torn gaskets on 2-door cooling unit with cold hold attached in prep areas across from grill. Instructed to repair and maintain in good condition.

- comments: observed extensive water-damaged wall and ceiling with peeling and crumbling paint. Instructed to repair and maintain smooth and easily cleanable ceiling and maintain.
