- comments: the person in charge does not have a city of chicago sanitation certificate. Priority foundation violation.

- comments: no city of chicago certified food manager on site while tcs foods were being prepared and served during the inspection. Priority foundation violation 7-38-012 citation issued.
10. Adequate handwashing sinks properly supplied and accessible
- comments: noted all the handwashing sinks at all the bars throughout the facility found not accessible for handwashing purposes with strainers/slop containers inside all sinks. Reviewed the hand sinks are for handwashing purposes only and must be accessible at all times. Priority foundation violation 7-38-030(c) citation issued.

- comments: noted no handwashing sink located at the dishwashing area or easily accessible to the area in the kitchen. Must install a handwashing sink for handwashing purposes only at the dishwashing area of the kitchen. Priority foundation violation.

- comments: noted the low-temperature chlorine sanitizing dishwashing machine at the east front bar not dispensing chlorine sanitizer. Noted 0 ppm chlorine after several attempts and priming the machine. Machine tagged held for inspection and must not use until repaired and properly dispenses chlorine sanitizer. No dishes being washed, no citation issued. Priority violation.

- comments: all bulk foods, including spices not in the original container, must be labeled with the product common name.

- comments: all food handlers must wear an effective hair restraint.

- comments: wiping cloths in the food prep area must be held between use in the containers of sanitizing solution provided on-site.

- comments: noted employees personal belongings ie: shoes and backpacks, being stored in the dry food storage area. Must provide a designated employee storage area for personal belongings not in food/food contact areas.

- comments: no proof of allergen training or certificate for all the city of chicago certified food managers. Must provide.
60. Previous core violation corrected
- comments: the previous core violation from report #2362706 on 2-21-20 was not corrected. #16- observed slight pink build-up inside ice machine. Instructed manager must clean interior of ice machine and maintain. Priority foundation violation.
