21. Proper hot holding temperatures
- comments: observed improper hot holding temperatures of tcs foods at the holding unit. Observed chicken at 95-128f, chile relleno peppers and rice at 104f, fish at 108f. Management instructed to maintain all hot foods above 135f. Priority violation 7-38-005. Citation issued.
22. Proper cold holding temperatures
- comments: observed improper cold holding temperatures of tcs foods inside of the deli case. Observed various types of deli meats (ham, salami, turkey, etc. ) at 44-48f. Management instructed to maintain all cold foods below 41f. Priority violation 7-38-005. See violation #21 above for citation.
36. Thermometers provided & accurate
- comments: observed no working thermometers inside of the dairy walk-in cooler and 2nd floor walk-in freezer. Management instructed to provide.
43. In-use utensils: properly stored
- comments: observed plastic cups used as a scoop for salsa and sofrito in the 2nd floor walk-in cooler. Management instructed to use a utensil with a handle.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed several smaller cutting boards in the meat prep area that are heavily stained and scored. Management instructed to resurface or replace the stained cutting boards.
49. Non-food/food contact surfaces clean
- comments: clean the vegetable display cases, and the exterior of the stove and broaster with heavy grease buildup in the 2nd floor hot food prep area. Clean the stained light shield in the deli prep area.
55. Physical facilities installed, maintained & clean
- comments: clean the food debris and dust on the walls and ceiling tiles of the 2nd floor hot food prep area. Clean the grease buildup on the floor of the 2nd floor hot food prep area especially under the cooking equipment.
