- comments: observed no certified food manager on site upon arrival while tcs foods were prepared and served. Instructed manager to ensure a city of chicago certified food manager is on site during all hours of operation. Priority foundation violation 7-38-012 citation issued.
22. Proper cold holding temperatures
- comments: observed various tcs foods held at inadequate temperatures ranging from 47-51 f. Manager provided written temperature logs and procedures. Temperatures are taken everyday at 10am, 2pm, and 6pm. Temperature log revealed all items were measured between 38-40 f at 10am. Instructed manager to ensure all cold tcs foods are held at 41 f and below. Manager relocated 1/4 pound sliced tomatoes, 1/2 pound cheese, 1/4 pound shredded lettuce, and 1/8 pound turkey. Priority violation 7-38-005 no citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed 1 cooler with an inadequate ambient air temperature of 51 f. Manager provided temp logs for tcs foods located in cooler. Refer to violation #22. Priority violation 7-38-005 no citation issued.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed no test strips on site for measuring quat sanitizer concentration. Instructed manager to provide test strips. Priority foundation violation 7-38-005 citation issued.
