- comments: observed evidence of pest activity on the premises. Observed approximately 30 rodent (mice) droppings on the floors behind the chest freezer in the rear dry storage room and 3 live cockroaches on the side of the grease trap box located under the 3-compartment sink. Instructed to detail clean and sanitize and remove all evidence of pest activity from all affected area. Additional pest control service is needed to eliminate the pest activity. Priority foundation violation 7-38-020(a),citation issued.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed frozen foods stored in plastic grocery bags inside of the chest freezers. Instructed to use only food grade storage bags or containers and maintain.
49. Non-food/food contact surfaces clean
- comments: instructed to detail clean the grease on the outside and inside of the deep fryer,kitchen storage shelfs,tops/bottoms of prep tables,interior of microwave.
55. Physical facilities installed, maintained & clean
- comments: instructed to detail clean and maintain floors with grease and dried food debris accumulation along the walls and in all corners throughout kitchen prep/cooking area especially under and around cooking equipments.
