16. Food-contact surfaces: cleaned & sanitized
- comments: observed the utensil surface temperature of the irreversible registering temperature indicator at 153f when placed inside of the high temperature dishwashing machine behind the bar. Also observed the led screen not working so that the wash and rinse temperature of the dishwashing machine cannot be read. Management instructed to repair the led screen so the temperature gauge is visible and repair the machine so that a utensil surface temperature above 160f is achieved at the high temperature dishwashing machine. Priority violation 7-38-025. Citation issued.

23. Proper date marking and disposition
- comments: observed ready-to-eat tcs foods (salad dressings, cooked vegetables, chili and sauces, etc.) stored in the prep coolers beyond the 7-day maximum use by date. Management instructed to use or discard all ready-to-eat tcs foods after 7 days with the prep date counting as day 1. Priority violation 7-38-005. Citation issued.

38. Insects, rodents, & animals not present
- comments: observed approx. 50 mouse droppings on the floor along the walls and on the liquor storage shelves in the basement liquor storage room. Management instructed to clean and remove all rodent droppings from all affected areas. Additional pest control service is needed to eliminate the pest activity. Priority foundation violation 7-38-020(a). Citation issued.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed frozen habanero peppers stored in a cardboard box in the basement chest freezer. Management instructed to use a proper food grade storage container or storage bag to store all foods.
