23. Proper date marking and disposition
- comments: observed ready-to-eat, time/temperature control for safety (tcs) foods not date marked properly in coolers to indicate the product's name and date in which the food must be sold, discarded or consumed within 7 days. Instructed to provide proper labels for date marking and discard date for refrigerated, ready-to-eat, tcs foods held over 24hrs placed in all cold-holding units. Priority foundation violation. 7-38-005. Citation issued.

- comments: observed food stored in containers in coolers without labels containing name of the food item. Instructed to provide proper labels.

38. Insects, rodents, & animals not present
- comments: observed live pest activity (3 roaches) crawling on the grease trap near the 3 compartment sink in the dishwashing area. Instructed to correct by contacting professional pest control company for service. Priority foundation violation. 7-38-020(a). Citation issued.

- comments: observed in-use utensils stored improperly directly inside dry storage food containers. Instructed to stor properly between usage.

- comments: observed plates not inverted. Instructed to invert plates after sanitizing and air drying.

- comments: observed broken door handle on 2 door cooler in the kitchen/prep area. Instructed to replace/repair.

- comments: observed grease trap with a build-up of dirt, grease and soap scum near the 3 compartment sink in the dishwashing area. Instructed to clean and suggested contacting a plumber to rod out/service.

- comments: observed no waste receptacle at handwashing sink in the kitchen prep area where disposable paper towels are provided. Instructed to provide.

- comments: observed dirt build up in the floors in the corners in the front prep area underneath the sushi bar and underneath the 3 compartment sink in the dishwashing area.
