- comments: observed tcs food items (prepared sauces, cooked chickpeas) in the walk-in cooler stored covered with food container lids while cooling. Instructed to store tcs food items loosely-covered or uncovered (if protected from overhead contamination) while cooling to facilitate heat transfer and maintain.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed inverted milk crates and plastic pallets used to elevate chemicals and other equipment beneath the 3-compartment sink in the warewashing area. Instructed to remove milk crates and plastic pallets and replace with dunnage rack or other equipment that facilitates cleaning beneath equipment and monitoring for pests and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed floor beneath 3-compartment sink and adjacent to floor-mounted grease trap in the warewashing area to be soiled with grease and dried food debris. Instructed to clean floors beneath equipment at adequate frequency to prevent build up of grease, dried food debris, and other soils and maintain.
