- comments: observed excessive black like substance throughout the interior of the ice machine. Ice machine is used for human consumption. Instructed to clean, sanitize and maintain. Priority foundation violation 7-38-005, citation issued.

- comments: observed tcs food at improper temperatures ranging 48. 0f-51. 2f. Chicken wings, drumsticks, and leg quarters, 8 slabs of beef ribs, 120 eggs, cheese, salami, and a gallon of milk. All mentioned products were stored inside the walk-in cooler for over 24 hours. Food discarded and denatured by employees. Pounds 1,000 lbs and 1 gallon ,valued at $2,500. Priority violation 7-38-005, citationissued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed an improper temperature of a walk-in refrigerator at 60. 0f with tcs foods stored inside for sale. The unit was tagged. Once repaired, email cdph to have unit reinspected, until reinspected the unit shall not be used. Must have cold holding units at 41. 0f or below. Priority 7-38-005, citation issued.

- comments: observed the cold holding units on display for customers without thermometers. Instructed to provide and maintain inside all cold holding units.
38. Insects, rodents, & animals not present
- comments: observed approximately 175-200 mice droppings in the following areas: on the floors, boxes with products inside, and on the shelving unit inside of the walk-in cooler, in the lower freezer/cooler compartments of the cold holding units near the front service desk, and on the floor near the hot water tank. Instructed to eliminate pest activity, clean and sanitize affected areas and recommended contacting pest control for a service. Priority foundation 7-38-020(a), citation issued.

- comments: observed ice build in the following areas: on the floors, condensing unit, and shelving units inside of the walk-in freezer and in the lower compartment of the freezer/cold holding units near the from service desk. Instructed to remove ice build up and maintain.

- comments: observed clutter and broken down cardboard boxes across from the ice machine and in the mop sink closet. Instructed to remove unnecessary items, organize, and maintain said areas.
