- comments: observed person in charge without proof of food safety management training during time of inspection. Must provide.
2. City of chicago food service sanitation certificate
- comments: observed facility without a valid city of chicago food service sanitation certificate holder on site while tcs foods where being held and handled. Informed person in charge an original city of chicago food service certificate must be posted, along with the certified manager being on site when time and temperature control for safety(tcs) foods are stored, prepared, cooked and served. Priority foundation violation #7-38-012. Citation issued.
36. Thermometers provided & accurate
- comments: noted digital metal stem thermometer on site not working. Working thermometers are required to monitor the internal food temperature of hot/cold tcs food cooked, delivered and served. Instructed to repair/replace and maintain proper thermometers on site at all times. Priority foundation violation #7-38-005. Citation issued
37. Food properly labeled; original container
- comments: noted sauces in various containers without labels of common name. Instructed to provide labels of common name for all items removed from its original container.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed racks in 2 door cooler not clean. Noted black substance on underside of rack. Instructed to clean, sanitize and maintain.
54. Garbage & refuse properly disposed; facilities maintained
- comments: noted encrusted grease on top of outside grease receptacle lid. Instructed to deep clean and maintain.
57. All food employees have food handler training
- comments: noted expired food handlers certificates. Instructed to update and maintain.
58. Allergen training as required
- comments: observed no proof of allergern training for all certified food manager. Instructed any persons with the city of chicago food sanitation certificate to comply with completion of training and provide and maintain documention on site at all times.
