10. Adequate handwashing sinks properly supplied and accessible
- comments: instructed management to provide additional handwashing sink accessible to the rear baking/prep/packaging area with hot and cold running water, supplied with soap and hand papertowels. Priority foundation violation 7-38-030(c), no citation issued.

28. Toxic substances properly identified, stored, & used
- comments: observed toxic items open bait green pellets in various areas of the rear baking prep/dishwashing areas under and around 3 compartment sink and 2 compartment sink areas behind baking mixer equipment, dry storage storage racks. Instructed to detail clean and remove said toxic items, rodent bait stations must be properly stored and maintained in a safe and sanitary manner. Priority violation 7-38-015,citation issued.

- comments: observed no thermometers inside refrigeration units conspicuously posted to monitor the ambient temperature of front display cooler equipment. Instructed to equip all refrigeration units with accurate and working thermometers.

- comments: observed prepackaged pastries foods on display not properly labeled. Must label packages with food name, ingredients, net contents, source, and list of 'allergens. ' priority foundation violation 7-38-005, no citation issued.

38. Insects, rodents, & animals not present
- comments: observed a rodent infestation throughout the premises. Observed over 500 mouse droppings on the floors throughout the rear bakery prep areas and on storage shelf, behind the front counter and behind baking equipment, under the 3 compartment sink and 2 compartment sink areas, in employee washroom and along all wallbases of rear baking and refrigeration storage areas. Also, approximately 20-30 live fruit flies on walls and food equipment throughout ther rear baking prep areas and behind rear unused ice maker. Management instructed to remove all rodent (mice) droppings and detail clean and sanitize all affected areas. Additional pest control service is needed to eliminate the pest activity. Priority violation 7-38-020(a), citation issued.

- comments: observed the rear overhead door and exit door not pest-proofed 1/4' inch mode of entry and broken weather-strips. Must pest proof said doors all across the bottoms to prevent pest entry.

- comments: observed no splashguard at handwashing sink next to 3-compartment sink at rear baking food prep/dishwashing area. Must provide and maintain.

- comments: must store all food items at least 6' off of the floor and 6' away from walls to prevent rodent harborage conditions. Must use proper storage racks so that the floors can be cleaned underneath.

- comments: instructed to provide hair restraints for all food handlers when working with open foods.

- comments: instructed to seal raw wooden storage racks at front sales floor and behind the service counters use a non-toxic finish and maintain.

- comments: observed large mixer baking equipment used in the baking food prep areas. Management instructed to provide an approved alternative method to wash, rinse, and sanitize said baking equipment or provide smaller food baking equipment that can be submerged in the 3 compartment sink.

49. Non-food/food contact surfaces clean
- comments: detail clean the all baking equipment throughout including the interior of 3-compartment sink and 2 compartment sink, storage racks, interior of coolers, ovens encrusted with grease and food debris. Clean all prep coolers, prep tables, storage shelves, the grease trap.

50. Hot & cold water available; adequate pressure
- comments: observed no hot running water on the premises. Water temperature at 64. 7 f at this time. Management instructed to provide adequate hot water above 110f at the 3 compartment sink and minimum of 100 f at all hand washing sinks. Priority violation 7-38-030(c),citation issued.

- comments: must provide toilet room receptacle with cover for sanitary napkins in unisex bathroom

- comments: must seal all holes and openings in the walls of the rear packaging storage areas.
