- comments: observed chlorine sanitizer concentration above 200 ppm in 3 compartment sink. Instructed manager to utlize chlorine sanitizer with a concentration between 50-200 ppm. Sanitizer drained fresh sanitizer placed in 3 compartment sink. Priority violation 7-38-005 citation issued.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed cooler in front front service area near front 3 compartment sink with an inadequate internal air temperature of 47 f. Instructed manager to ensure all cold holding units have an internal air temperature of 41 f and below. Unit tagged. Priority violation 7-38-005 citation issued.

38. Insects, rodents, & animals not present
- comments: observed 2 live roaches in cooking pots of equipment on storage racks. Instructed manager to service any areas affected by pests. Instructed manager to clean and sanitize any affected pots. Priority foundation violation 7-38-020(a) citation issued.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed pots that are too large to fit in a 3 compartment sink. Instructed manager to provide written alternative proceedures for washing rinsing and sanitizing equipment.

49. Non-food/food contact surfaces clean
- comments: observed soiled interior of microwave. Instructed manager to clean

56. Adequate ventilation & lighting; designated areas used
- comments: observed hood filters above griddles with an accumulation of dust and grease. Instructed manager to clean and maintain.

- comments: observed several employees with no record of food handler certificates. Instructed manager to comply with requirement.
