Report date: Jul 7, 202322. Proper cold holding temperatures
- comments: observed various tcs foods stored inside a 2-door cooler in the prep area at improper internal temperatures such as: 25lbs of uncooked fish at 52. 7f, 35lbs of raw shrimps at 45. 8f, and 20lbs of cooked chicken at 58. 7f. Manager discarded and denatured 80lbs at a total cost of $650. Priority violation citation #7-38-005.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed the 2-door cooler in the prep area which holds tcs food with an improper amibent temp of 59. 7f. Instructed manager not to use until it can maintain a proper temp of 41f or below. Said cooler tagged/held for inspection. Priority violation citation #7-38-005.
38. Insects, rodents, & animals not present
- comments: observed back door with a quarter inch gap at the bottom. Instructed to repair to prvent entry point for pests.
41. Wiping cloths: properly used & stored
- comments: observed wet wiping cloths placed on counters throughout the facility. Instructed to keep and maintain wet in use wiping cloths in proper sanitzing solution.
49. Non-food/food contact surfaces clean
- comments: entire exterior surface of warewashing machine including drain lines, and attached piping with excessive food accumulation, lime and calcium build up. All storage shelves through out, entire wok line, legs, wheels and all attached piping of all equipment not clean, excessive food debris. Instructed to clean all and maintain
51. Plumbing installed; proper backflow devices
- comments: observed leak at pipe under 3-compartment sink and at the base of the faucet. Instructed to repair and maintain.
55. Physical facilities installed, maintained & clean
- comments: obsevred excessive food debris on the floor in the walk-in freezer underneath crate. Also observed floors dirty through out prep area and under equipment must detail clean and maintain.
56. Adequate ventilation & lighting; designated areas used
- comments: observed the hood and filters above the cooking equipment needs detail cleaning. Must maintain.
