- comments: noted employees drinking and preparing food in the kitchen prep area. Instructed management to provide a designated area for employees to drink and eat and not at the prep areas.

- comments: noted internal temperature of the following tcs food items inside 2-door refrigeration unit to be improper:-assorted chicken in containers (45. 5f/48. 4f/45. 1f). Manager immediately and voluntarily disposed of 40 lbs of products worth $70. 00 through denaturing process. Priority violation #7-38-005
33. Proper cooling methods used; adequate equipment for temperature control
- comments: equipment not maintaining proper temperature. Noted temperature of 2-door refrigeration unit at the prep area to be improper at 49. 6f. Instructed not to use equipment until maintaining proper temperature of 41f and below. Priority violation 7-38-005. Citation issued.
38. Insects, rodents, & animals not present
- comments: noted over 50 mouse droppings along the wall base and behind equipment in the kitchen prep area. Instructed to detail clean and sanitize affected areas eliminate pest activity. Instructed to consult with pest control company and have premises treated. Priority foundation violation #7-38-020(a). Citation issued.

- comments: noted employee with long beards and no beard guard. Instructed to wear beard guard at all times when preparing food.

- comments: noted waste standing water on the floor with film and odor sipping from the walls and waste water pipe onto the floor and unused equipment at the basement dry storage area. Instructed to clean, sanitize and maintain. Priority violation #7-38-030(c). Citation issued.

- comments: noted heavy clutter throughout the establishment on shelves, floors inside unused equipment, and in storage areas. Instructed to detail clean, organize, and remove all unnecessary or unused articles and equipment to prevent hiding places for pests.

- comments: noted the following previous core violation #47, #57, #58 from inspection report #2567640 dated 11/28/2022 not corrected. 47) 4-501. 11- torn rubber door gaskets on several rear coolers/freezers. Must replace. 57) 2-102. 13-- no proof of food handler training or certificates for all required employees. Must provide. 58) 2-102. 13:no proof of allergen training or certificates for all the city of chicago certified food managers. Instructed to correct the above violations. Priority foundation violation #7-42-090. Citation issued.
