Informed person in charge city of chicago original food service certificate must remain posted on site and certified manager on site during tcs food prep, cooking, serving and operating hours. - comments: observed refrigerated ready to eat tcs food(sliced tomatoes and shredded lettuce) not dated in walk-in cooler. Refrigerated ready to eat tcs food held more than 24 hours shall be clearly marked with date by which food to be sold, consumed, or discarded, with a maximum of 7 days. - comments: observed a 1/4' gap at the bottom of the rear exit door. Must provide a tight fitting seal at all outer openings to prevent the entry of pests.
