- comments: observed the following cold tcs foods stored throughout cooling units without any labels. . . They are as follows approximately 50 lbs cooked chicken, 40 lbs cooked ground beef, and 4o lbs individually packaged cooked spaghetti and alfredo pasta noodles. Instructed to provide discard date labels on all tcs foods prepared on-site and held for more than 24 hours. Priority foundation violation. #7-38-005. Citation issued.

- comments: observed missing thermometer from inside 2 door cooling unit with cold hold attached (front prep area), instructed to provide.

- comments: observed floors throughout the facility with excessive grease and build-up food debris. Instructed to clean and maintain.

- comments: observed food handlers without food handler training certificates. Instructed to provide and maintain on-site for review.

- comments: observed previous core violation not corrected from report may 14, 2024 #2594581. They are as follows : 49)noted excessive spills on front shelving units where flavored syrups for lemonade area stored. Instructed to remove cardboard and clean all surfaces. � 55)observed outside receptacle/yard area not maintained. Instructed to remove all stacked items, grease buckets, trash, and old equipment and organize and maintain said area. Noted basement where dry storage and other facility equipment are stored with excessive clutter and items directly on floors. Instructed to clean, organize, and elevate all items at least 6 inches off the floor. 58)no allergen certificates on site for all certified food managers. Instructed to provide instructed to correct. Priority foundation violation. #7-42-090. Citation issued.
