- comments: observed handwashing sink at bar made inaccessible by water being disconnected and covering in plastic. Instructed to correct and maintain all handwashing sinks in an open and accessible manner. Priority foundation violation 7-38-030(c). Citation issued.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed low temperature dish machine located at bar maintaining an improper chemical sanitizer concentration of 0ppm of chlorine. Machine tagged and held for inspection. Instructed to repair or replace and miantain dish machine so that it is capable of delivering proper chemical sanitizer concentrations between 50-100 ppm of chlorine. Priority violation 7-38-025. Citation issued.
22. Proper cold holding temperatures
- comments: observed the following tcs items held at the stated improper temperatures inside 2 door cooler across from cook line: chicken at 48. 1f, hamburgers at 47. 6f, salmon at 47. 6f, and steaks at 44. 7f. Management voluntarily discarded approximately 20lbs of product valued at approximately $100. Instructed to maintain all tcs items at or below 41f at all times. Priority violation 7-38-005. Citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed 2 door prep cooler opposite cook line containing tcs items such as chicken, salmon, hamburgers, and steaks maintainining an improper ambient air temperature of 46. 5f. Cooler tagged and held for re-inspection. Instructed to repair or replace and maintain cooler so that it is capable of maintaining an ambient air temperature of 41f or below. Priority violation 7-38-005. Citation issued.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed torn gaskets on interior of 2 door cooler opposite cook line and on interior of walk-in cooler labeled "holiday inn. " instructed to repair or replace and maintain in good condition.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed no covered trash receptacles inside women's toilet room located off of lobby. Instructed to provide.
55. Physical facilities installed, maintained & clean
- comments: observed build up of black slime on wall of walk-in cooler used to store kegs and other drinks. Instructed to detail clean and maintain in good condition.
