21. Proper hot holding temperatures
- comments: found time/temperature control for safety (tcs) food cooked chili at an improper hot holding temperature of 53f. All hot holding tcs foods must maintain a minimum temperature of 135f at all times. Instructed to discard. Priority violation. 7-38-005. Citation issued.
36. Thermometers provided & accurate
- comments: found no thermometers inside any coolers on site. In a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature or a simulated product temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit. Instructed to provide.
40. Personal cleanliness
- comments: found food handlers without hair restraint. All persons shall wear effective hair restraints, such as hairnets, baseball caps, or sun visors, where the hair is covered and contained. Hair spray is not adequate. Mustache or beard restraints shall be used for any facial hair exceeding one (1) inch in length.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed 2 cutting boards on top of reach in freezer in the prep area discolored with deep cuts. Instructed to resurface or re-place and maintain.

- comments: observed all shelves in reach in cooler filled with an accumulation of a grey, fuzzy, mold like substance. Instructed to lean sanitize and maintain.
50. Hot & cold water available; adequate pressure
- comments: found no hot water on site(handwashing sinks, utility sinks, 3 compartment sink, prep sink). Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the retail food establishment. Priority violation. 7-38-030(c). Citation issued.
51. Plumbing installed; proper backflow devices
- comments: found standing liquid in floor pipe, said pipe is connected to boxed soda machine located in food preparation and soda dispensor located in front food preparation area. Instructed to remove liquid, clean, sanitize, and maintain.

- comments: found soda/ice machine located in front prep, observed drain tubes submerged in in floor drain pipe. An air gap between the water supply inlet and the flood level rim of the plumbing fixture, equipment, or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than 25 mm (1 inch). Instructed to reair and maintain. Priority violation. 7-38-030(c). Citation issued.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: found all plumbing fixtures in all washrooms soiled. Plumbing fixtures such as handwashing sinks, toilets, and urinals shall be cleaned as often as necessary to keep them clean.
55. Physical facilities installed, maintained & clean
- comments: found an excessive amount of accumulated food debris and grease build up, on floor under all cooking equipment. Must clean sanitize and maintain. Found standing water under ice machine and handwashing sink in same area. Instructed to remove and maintain.
61. Summary report displayed and visible to the public
- comments: found summary report posted in rear food preparation area. Instructed manager to post summary report in conspicuous place for customers to see. Priority foundation violation. 7-42-010(b)
