- comments: observed tcs foods at improper hot holding temperatures in the prep area on racks: 3 bins of cooked rib tips at improper internal temperatures betweens 83. 4f- 106. 1f. Premisies has no temperature logs. Food discarded and denatured totaled 40lbs at $350. Priority violation. Citation issued. 7-38-005.

- comments: instructed manager on proper thawing under cool running water or inside the walk in cooler.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed the cutting board in the front prep area with deep dark seam. Must replace and maintain.

- comments: observed the pipes behind the cooking equipment with grease and debris build up. Must clean and maintain.
