- comments: observed improper temperatures of tcs ready to eat foods such as appx. 30lbs. Cooked rib tips on top rack inside of bbq pit ranging from 100. 2f-122. 3f. Product was discarded by manager must have hot holding foods at 135. 0f or above. Appx. 30lbs. $500. (cos)(priority 7-38-005)(citation issued)

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: must remove rust from lower shelving unit of rear prep table.

55. Physical facilities installed, maintained & clean
- comments: must finish and make wall over 3- compartment sink,front cashier area and pit area and where needed to be smooth and easily cleanable. Observed chipping concrete wall in rear prep/dish washing area must make smooth and easily cleanable. Must repair or replace loose interior wall panel of walk in freezer. Must seal several holes in brick walls throughout premises.

- comments: previous core violations from report #2595839 6/6/24 not corrected- #47-: 4-101. 19 : must remove rust from walk in cooler & freezer shelving units. #48- 4-301. 12 : observed a large plastic bins to large to be submerged into 3- compartment sink to be properly sanitized. Must get a smaller bins or a larger sink. #49-4-601. 11(c) : must clean grease and food debris build up from walk in cooler-shelving units, fan guard covers, compressor unit. Storage racks,dish racks,fryer cabinets & wheel bases,prep tables,glass on pit. #55-6-201. 11 : must clean excessive grease and dirt build up on walls & ceilings, beams throughout premises ,including walk in cooler. #55-6-201. 13: must repair or replace damaged window behind bbq pit,gaps in & loose wall bases near mop sink and where needed,floor in poor repair in walk in freezer. #56-6-202. 11 : must repair or replace missing light shields where needed. (priority foundation 7-42-090)(citation issued)
