- comments: noted raw eggs stored above bbq sauce ready to eat inside the walk in cooler. Instructed to always store cooked and ready to eat foods above the uncooked (raw) foods. Food must also be covered and protected. Priority violation #7-38-005. Citation issued.

23. Proper date marking and disposition
- comments: noted temperature controlled for safety food items prepared on site and held for more than 24 hours, but no more that 7 days inside the 2 door refrigeration unit an dwalk in cooler. Instructed to properly label all ready to eat food items with product name and used by date. Priority foundation violation#7-38-005(a). Citation issued today.

- comments: noted bulk food items stored inside containers at the basement food prep/dry storage not properly labeled. Instructed management that all bulk and working food ingredient containers must be labeled with contents name.

- comments: noted grease trap on premise located at the basement food/dry storage area not maintained with thick grease on top, floor and aroung the container. Instructed to detail and maintain grease trap.

- comments: noted outside grease container not maintained with grease on top of container. Instructed to detail clean and maintain grease container and its surrounding. Priority foundation violation#7-38-020(b). Citatin issued.

- comments: noted clutter on floors,unused equipment at the basement dry storage area. Instructed to detail clean, organize and remove all unnecessary or unused articles and equipment to prevent hiding places for pest.
