- comments: observed food items stored on floor in walk-in cooler located in rear kitchen preparation area. Instructed manager to elevate all food six inches off floor.

41. Wiping cloths: properly used & stored
- comments: observed wiping cloths stored on prep tables. Instructed manager to store in sanitizing solution between uses.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed dirty interior of microwave located in the kitchen preparation area. Instructed to clean and maintain.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed no chemical test kit that accurately measures the concentration in mg/l of sanitizing solution on site. Priority foundation violatioan 7-38-005. Instructed the person in charge to provide a chemical test kit or other device that accurately measures the concentration in mg/l of sanitizing solutions and maintain. Citation issued.

49. Non-food/food contact surfaces clean
- comments: observed soiled tabletop canopener. Instructed to detail clean, sanitize, and maintain.

50. Hot & cold water available; adequate pressure
- comments: observed no hot water pressure at handwashing sink in employee toilet room. Priority 7-38-030�. Adequate water under pressure shall be provided to all fixtures and equipment that are required to use water. Citation issued

53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed no covered trash receptacle in the women's toilet room. Instructed to provide a covered trash receptacle and maintain.

55. Physical facilities installed, maintained & clean
- comments: observed grease and food debris underneath cooking equipment in rear kitchen preparation area. Instructed to detail clean, sanitize, and maintain.

57. All food employees have food handler training
- comments: observed employees with no food handler certificates. Instrcuted to ensure that all employees have food handler certificates and maintain.

58. Allergen training as required
- comments: observed no allergen awareness training certificate. Instructed to ensure that any individual that holds a city of chicago foodservice manager certificate has completed and received allergen awareness training and certificate.
