- comments: observed no city of chicago certified food manager certificated posted and valid while tcs foods are being prepared,handled and served such as (chicken,) must be on site at all times. (priority foundation 7-38-012)(citation issued)
10. Adequate handwashing sinks properly supplied and accessible
- comments: observed exposed hand washing sink in prep area clogged, not draining. Instructed to repair and maintain all exposed hand washing sinks. Priority foundation violation 7-38-030(c). Citation issued.
22. Proper cold holding temperatures
- comments: observed tcs foods held at improper internal temperatures in the prep cold holding unit, such as 12oz of chicken at 48. 5f and garlic spread at 78. 6. Manager discarded. All cold tcs food must maintain 41f or below. Priority violation. Citation issued 7-38-005.
55. Physical facilities installed, maintained & clean
- comments: observed coffee makers not in use on the floor in the storage area. Instructed manager to keep off the floor at least 6 inches
