Inspectors found significant food safety violations during the inspection. About 4 pounds of portioned lasagna and 2.5 pounds of pasta were stored in a cooler without required date labels for prepared foods kept more than 24 hours; the food was voluntarily discarded, and a citation was issued. Inspectors also found that previous violations had not been corrected, including damaged basement flooring and unclean floors, walls, and ceilings in basement storage and prep areas; a citation was issued for this repeat issue.Additional findings included soiled wiping cloths not stored properly between uses, damaged cooler gaskets with dried food debris, mold-like buildup on walk-in cooler walls, ceiling, shelving, and draft system hoses, and excessive dust and dirt on a fan inside the walk-in cooler.
