- comments: noted no certified food manager on duty while tcs foods (eggs, sausage, deli etc. ) were being prepared and served. Instructed management that a certified food manager must be present at all times tcs foods are prepared and served. Also, the person in charge must have a city of chicago certificate by the next inspection (upon being inspected) priority foundation violation 7-38-012. Citation issued.
8. Hands clean & properly washed
- comments: noted employee while wearing gloves prepared sandwiches, dumped paper inside garbage can, toughed the face all without changing gloves or washing hands. Discussed with management that employees change gloves and washing their hands at change of task or moving from one prep area to another. Priority violation citation issued 7-38-010
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: noted ice build-up inside the walk-in freezer on the floor and shelves. Instructed to repair and maintain the condensation units.
51. Plumbing installed; proper backflow devices
- comments: noted one of two bathrooms on site not properly flushing. Instructed to repair and maintain.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: noted washrooms on-premise with garbage receptacles and no lids. Instructed to provide trash cans with lids at all women washrooms and unisex washrooms.
54. Garbage & refuse properly disposed; facilities maintained
- comments: noted outside garbage dumpster overloaded and preventing proper lid closure. Instructed always to have dumpster lid closed to prevent food source for pest priority foundation #7-38-020(b).
56. Adequate ventilation & lighting; designated areas used
- comments: missing lights inside walk-in freezer. Instructed to provide proper lighting with shatter-resistant bulb.
