- comments: found low-temperature dish machine inadequately sanitizing dishes at 0 ppm. Instructed manager to provide a sanitizing solution to sanitize dishes per manufacturer's instructions adequately. Instructed manager to no longer use dish machine until it is re-inspected by cdph and at an adequate sanitizing solution of 50 - 100 ppm. Priority violation. 7-38-025. Citation issued. Serviced by eco lab at the time of inspection.

- comments: found walls in walk-in cooler filled with dust. Instructed to clean, sanitize, and maintain. Noted floor drain located under prep sink in the basement prep filled an excessive amount of black mold substance. Must sanitize and maintain.

- comments: found condensor fan filled with dust located in walk-in coolers. Instructed manager to clean, sanitize and maintain.

- comments: found continued non- compliance from inspection report # 2562235 conducted on 8/16/22. The following previous core violations were not corrected: 6-202. 15 observed the alley exit door with a 1/4 inch gap at the far left corner. Instructed to make said door tight fitting and rodent proofed. Instructed manager to comply. Priority foundation violation. 7-42-090. Citation issued.
