2. City of chicago food service sanitation certificate
- comments: noted no certified food manager on duty with the city of chicago food service certificate on-site while tcs foods (deli sandwiches, pastries etc. ) were being prepared and served. A certified food manager with the city of chicago original food service must be present at all instructed management times tcs foods are prepared and served. Also, the person in charge must have a city of chicago certificate by the next inspection (upon being inspected) priority foundation violation 7-38-012. Citation issued.

- comments: noted display cooler temperated at the front prep to be improper at 51. 9f. No tcs food items inside the cooler. Instructed manager not to use or store any tcs food items inside cooler until equipment is maintaining proper temperature. Priority violation #7-38-005. No citation issued today.

- comments: noted ice scoop stored inside ice machine on ice used for consumption. Instructed to remove and provide an ice scoop holder.

- comments: 8-404. 13(b:4) noted the following core violations 44, 45, 55, 58 with the rules numbers below from inspection #2509854 dated 5/17/2021 not corrected:- 44) 4-903. 11 (a; b;d): all pots/pans/mixing bowls stored clean on shelving must be inverted. ---must not store dish racks inside the utility service sink. 45) 4-903. 11(a; c): all stored items throughout the facility, canned goods, utensils, and items in the rear stairwell must be stored elevated from the floors. 55) 6-201. 11: extremely dirty floor drain under the three-compartment sink. ----excessive dust on the ceiling vent in the rear dishwashing area. Must clean and maintain all. 58) 2-102. 13: no proof of allergen training or certificate on site for the above city of chicago certified food manager. Must provide. Instructed management that all the above violations must be corrected. Priority violation #7-42-090. Citation issued.
