- comments: observed the surface temperature of a dishwasher thermometer at 155f after being sanitized in the kitchen high-temperature dish machine. Management instructed that the hot water temperature must be above 180f with a utensil surface temperature of 160f or above. Priority violation 7-38-025.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed no irreversible registering temperature indicator on the premises to take the utensil surface temperature inside of the high-temperature dish machines. Management instructed to provide. Priority foundation violation 7-38-005.

51. Plumbing installed; proper backflow devices
- comments: repair the leaking drain line beneath the 1 compartment prep sink in the kitchen.

58. Allergen training as required
- comments: observed the certified food manager without an allergen training certificate. Management instructed that all certified food managers must show proof of training.
