Report date: Jun 13, 202322. Proper cold holding temperatures
- comments: observed improper cold holding temperatures of tcs foods inside of the 2 door deli prep cooler. Observed ham at 48f, cheese at 47f, and turkey at 45f inside of the prep cooler. Management instructed to maintain all cold foods below 41f. Priority violation 7-38-005. Citation issued.
28. Toxic substances properly identified, stored, & used
- comments: observed several bags of rodent bait and green bait blocks stored on the floor underneath the vegetable display case, behind the front counter and in the rear storage area. Management instructed that all rodent bait and poison shall be contained in a covered, tamper resistant bait station. Management instructed to remove all bait from all areas that is not stored properly. Priority violation 7-38-015. Citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed the 2 door deli prep cooler with an air temperature of 49f. The cooler was used to store tcs foods such as deli meat and cheese. Management instructed to repair and maintain the cooler below 41f. Priority violation 7-38-005. Citation issued.
36. Thermometers provided & accurate
- comments: no thermometers were observed inside of the small refrigerator/freezer combo unit and 1 door prep cooler in the taqueria prep area. Management instructed to provide visible thermometers inside of all coolers.
38. Insects, rodents, & animals not present
- comments: observed evidence of rodent activity on the premises. Observed approx. 150-200 rodent droppings on the floor throughout the premises, on the retail storage shelves, on the wooden and plastic storage pallets, and on the dry storage shelves in the rear storage area. Management instructed to clean and remove all rodent droppings from all affected areas and sanitize all affected areas. Additional pest control service is needed to eliminate the pest activity. Priority foundation 7-38-020(a). Citation isssued.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed the cutting board behind the meat counter heavily stained and scored with debris. Management instructed to resurface or replace the cutting board.
49. Non-food/food contact surfaces clean
- comments: clean the dry storage shelves in the rear prep/storage area and clean the retail storage shelves throughout.
55. Physical facilities installed, maintained & clean
- comments: clean the walls around the 3 compartment sink in the rear prep/storage area. Clean the floor of the walk-in freezer. Clean the floor underneath the cooking equipment in the taqueria prep area.
56. Adequate ventilation & lighting; designated areas used
- comments: clean the grease on the ventilation hood above the cooking equipment in the taqueria prep area.
