- comments: observed no hand washing sign at hand washing sink in rear unisex washroom. Instructed manager to provide hand washing signs at all hand washing sinks used by employees.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed milk crates used as shelving units in storage areas. Instructed manager to provide adequate shelving for easy cleaning and pest control.
49. Non-food/food contact surfaces clean
- comments: observed grease buildup and food debris on interior and exterior surfaces of fryers, hot holding units, prep tables, rolling carts, coolers, freezers and shelving units in all prep areas. Instructed manager to clean and maintain.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed spills and unused equipment in outside garbage area. Instructed manager to clean and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed black substance on interior surfaces and fan guards in walk-in coolers ,light shields in need of cleaning in all prep and walk-in cooler areas observed food debris and dust buildup on floors under hot holding unit in deli, under prep tables in bakery and meat prep area, under shelving units in rear storage area, along walls and corners in all prep and storage areas. Instructed manager to clean and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed excess clutter, unused articles and equipment in storage areas. Instructed manager to remove all unnecessary items to prevent pest harborage.
