High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee touched cauliflower with his bare hands at walk-in cooler. Operator discarded what was touched; educated and washed hands; **Corrected On-Site**

High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed : approximately 35 flies by dishwasher area touching clean glasses and plates ; approximately 5 flies in dry food storage area not landing; approximately 2 flies by the dishwasher at the main bar in the dining room not landing; approximately 2 flies in the kitchen at salad prep station not landing; Operator cleaned and sanitized all areas.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At 2 door flip top cooler in front of fryer-wings 50F.As per operator out of temperature for 2 hours. Food not prepped or portioned today. At True refrigerator at end of cook line near hand sink. Mac n cheese 46-48F. As per operator out of temperature for 45 min. Food not prepped or portioned today. Foods moved to walk-in cooler **Corrective Action Taken** **Repeat Violation**
