Food employees� may not contact exposed, ready-to-eat food with their bare hands. Must use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. Priority violation. 7-38-010. Citation issued. Food handler voluntarily discards said food item at 6 oz cost $3. 00.
16. Food-contact surfaces: cleaned & sanitized
- comments: found an excessive amount of black mold like substance on the food contact surface of the ice machine. Must clean sanitize and maintain. Priority foundation violation. 7-38-005. Citation issued.
29. Compliance with variance/specialized process/haccp
- comments: found salmon thawed and stored in reduced oxygen packaging. The operator states it is vacuum packaged on site. A retail food establishment shall obtain an approved haccp and variance from cdph before vacuum packaging. Manager voluntarily discards said food iems. Vacuum package machine was tagged and held for inspection by the chicago department of public health. Instructed operator to no longer vacuum package food items until haccp and a variance are approved by cdph. Priority foundation violation. 7-38-005. Citation issued
