Report date: Oct 4, 202310. Adequate handwashing sinks properly supplied and accessible
- comments: observed all exposed hand washing sinks throughout facility rendered inaccessible by wiping clothes,scooper and container being placed inside them. Instructed to maintain all exposed hand washing sinks open and accessible for hand washing. Priority foundation violation 7-38-030(c). Citation issued.
22. Proper cold holding temperatures
- comments: observed tcs foods held at improper internal temperatures in the walk-in cooler holding unit, such as 5lbs of pork at 65. 2f, 3lbs of pork at 67. 8f and 10lbs of pork soup at 68. 4f. Manager discarded and denatured a total 18lbs at $150. All cold tcs food must maintain 41f or below. Priority violation. Citation issued 7-38-005.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed walk-in cooler not maintaining proper temperature 65. 2f. Instructed manager to repair and maintain cooler at 41f or below. Prep cooler is tagged held for inspection and must not be used until reinspected by chicago department of health. Priority 7-38-005 citation issued.
38. Insects, rodents, & animals not present
- comments: observed live roaches, several fruit flies and dropping in facility in front and rear food preparation areas. Instructed person in charge to inform pest control service, remove all live roaches and sanitize all areas. Priority foundation 7-38-020(a)
41. Wiping cloths: properly used & stored
- comments: observed soiled wiping cloths stored on handwashing sinks. Instructed manager to store in sanitizing solution between uses.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed cutting board on meat department and main cook line covered with deep grooves and dark stains. Instructed to repair or replace and maintain smooth, cleanable surfaces.
49. Non-food/food contact surfaces clean
- comments: observed build up of residue and food debris on tables, cooling equipment, and shelving units in front and rear prep area. Instructed person in charge to clean and maintain.
52. Sewage & waste water properly disposed
- comments: observed waste water spilling excessively onto floor from drain pipes when draining 3 compartment sink. Instructed manager to get pipes cleaned to prevent back up onto floor of facility. Priority. 7-38-030(c). Citation issued.
55. Physical facilities installed, maintained & clean
- comments: observed multiple water damaged ceiling tiles in rear and front prep area, grocery sales floor area, and dining area. Instructed person in charge to replace and maintain all damaged and missing ceiling tiles.
