- comments: observed a 1/4' gap at the bottom left of the rear exit door. Must provide a tight fitting seal at all outer openings to prevent the entry of pests.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed a broken door to the ice machine located in the rear food prep area. Instructed to repair.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed facility without quaternary chemical test kit for sanitizer or for ware washing area. Informed person in charge quaternary test kit that accurately measures the concentration for sanitizer solution must be provided. Priority foundation violation #7-38-005. Citation issued.
49. Non-food/food contact surfaces clean
- comments: observed an excessive amount ice buildup on the floor/walls/ceiling of the walk in freezer. Must remove excess ice, detail clean, and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed water stained ceiling tiles in kitchen/dish area. Instructed to replace the stained ceiling tiles.
