21. Proper hot holding temperatures
- comments: found two containers of soup on counter in kitchen at 73. 2f and 77. 5f. Soups were not in a hot holding unit or being heated to proper temperature. Instructed to discard. Total 5 lbs of soup value at $45. Priority violation 7-38-005 citation issued for time/temperature control for safety food.

- comments: observed open bait (green bait blocks) on the floor in the basement area; instructed that all bait must be in an enclosed bait station. Priority violation 7-38-015 issued for maintenance of premises.

- comments: found a dead mouse inside of a food container on the floor in the basement area; instructed to remove at once. Corrected on site.

- comments: rodent infestation found on site. Observed 300 or more mouse droppings on the floor and shelves in basement prep and storage area. Instructed to clean and sanitize all areas and have pest control company service prior to reinspection. Priority violation 7-38-020(a) citation issued for control of vermin and insects.

- comments: observed food handlers without proper hair restraints; instructed to provide and maintain at all times while handling food. Corrected on site.

- comments: instructed to clean the interior bottom of fryer, exterior surfaces of cooking equipment, interiors of refrigeration units and freezers, prep tables and rolling cart and maintain.

- comments: found the drainpipe to the walk-in cooler in the basement not routed to a drain as required; instructed to properly route drain pipe to a drain for waste water disposal.

- comments: instructed to clean all pipes behind cooking equipment to remove grease observed on pipes and wall.

- comments: observed holes in the basement floor and in basement wall near three comp sink; instructed to seal holes where needed.

- comments: observed the vents above the cooking equipment in need of cleaning; clean same.

- comments: one food handler certificate presented and was expired; instructed that all food handlers must obtain the required food handler training.
