Report date: Jul 10, 202310. Adequate handwashing sinks properly supplied and accessible
- comments: observed no handwashing signage at the exposed handsink at the main cookline in the rear. Instructed the person in charge to provide handwashing signage at all handwashing sinks used by food employees and maintain.
15. Food separated and protected
- comments: observed raw beef stored above cooked beans in the 2 door refrigerator in the rear prep area. Instructed the person in charge always to store cooked and ready-to-eat foods above any uncooked (raw) foods. Food must also be covered and protected at all times. Priority violation #7-38-005. Citation issued. Cooked beans voluntarily discarded. Weight- 10 lbs valued at $40. 00.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed the interior guard of the ice machine with some dirt, not clean. Instructed the person in charge to detail clean and maintain.
41. Wiping cloths: properly used & stored
- comments: observed soiled wiping cloths stored on prep tables in the rear prep area. Instructed the person in charge to store in sanitizing solution between uses and maintain.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed torn/damaged rubber gasket on side of 2 door refrigerator adjacent to two-door freezer in the rear prep area. Instructed the perso in charge to repair or replace the gasket and maintain it.

- comments: observed multiple cutting boards with deep scratches and stains on prep stations in the rear prep area. Instructed the person in charge to resurface/replace cutting boards and maintain.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed food cooking equipment (pots, pans, etc. ) too large for 3-compartment warewashing sink. I informed the person in charge sink compartments shall be large enough to accommodate immersion of the largest equipment and utensils. If said equipment or utensils are too large for the warewashing sink, a warewashing machine or alternative equipment must be provided or installed, and or submit a sop for proper cleaning/sanitizing technique of oversize items or remove from facility. Priority foundation violation #7-38-025. Citation issued.
49. Non-food/food contact surfaces clean
- comments: observed accumulated grease and food debris on interior and exterior surfaces of cooking equipment, prep tables, coolers, freezers, shelving units. Instructed the person in charge to clean and maintain. (nonfood contact surfaces)

- comments: observed no covered trash receptacle in the public toilet room. Instructed the person in charge to provide a covered trash receptacle and maintain.

- comments: observed grease buildup, food debris, and dirt on the floor under cooking equipment, along walls, and in all corners in prep, dishwashing, storage, and basement areas. Instructed the person in charge to clean floors under all equipment, along walls, and all corners in all areas and maintain.
