Instructed person in charge certified manager as well as valid original certificate are both required on site while tcs foods (beans, steak, rice) are being prepared and served. Priority foundation 7-38-012. Citation issued.

- comments: observed approximately 30 rat droppings in basement area scattered on stairs and floor. Instructed person in charge to remove all rat droppings and clean and sanitize areas. Priority foundation 7-38-020(a). Citation issued.

- comments: observed interior of cold hold units in rear prep area in need of cleaning with food spills and residue. Instructed person in charge to clean and maintain.

- comments: observed staff toilet room door in rear not self closing. Instructed person in charge to install self closing device and maintain.

- comments: observed damaged wall in rear prep area. Observed damaged wall ledge above three compartment sink with gap allowing for water damage. Instructed person in charge to repair and maintain smooth and easily cleanable.
