- comments: observed several tcs foods held at inadequate temperatures ranging from 44-48 f. Instructed manager to ensure all cold tcs foods are held at 41 f and below. Manager discarded 5 pounds raw beef, 2 pounds chicken patties, 2 pounds chicken wings, and 2. 5 pounds philly steak meat ($120) priority violation 7-38-005 citation issued.

- comments: observed no certified food manager with food allergen training on site. Instructed manager to comply with requirement.

- comments: observed previous core violation not corrected within specified timeframe. Report #2591462 dated march 21, 2024, instructed facility to #47 repaint or replace rusted racks in basement walk-in cooler. Observed rusted storage racks in both walk-in coolers in basement.
