- comments: : 2-501. 11- no written cleaning procedure or required equipment for a vomit/diahrea event. Must provide. Priority foundation violation.
16. Food-contact surfaces: cleaned & sanitized
- comments: 4-501. 114 (a, b, c, d, e, f: 1 & 2)- noted the chlorine chemical dish machine not properly dispensing chlorine sanitizer while dishes were being washed. Noted 0 ppm chlorine after several attempts. Machine tagged held for inspection and must not use until repaired, properly dispenses sanitizer and c. D. P. H. Contacted for re-inspection and tag removal. Priority violation.

- comments: : 4-602. 13- all raw wooden shelving in basement storage next to the ice machine and the wooden shelving inside the walk-in cooler must be non-porous, painted/sealed to be smooth and cleanable.

- comments: 6-201. 11 inspector comments: a large hole/opening under the washbowl in the basement men's washroom must be sealed. Holes noted in walls and baseboards throughout the basement must be sealed. ----expanding spray foam used as a sealant throughout the premises to seal openings in walls, ceilings and floors must be removed/cut down to be smooth and cleanable. ----noted dirty floors with excessive grease and dirt throughout the basement dry food storage, under all coolers, shelving, under and behind all cooks line equipment, throughout the basement bar, behind the ice machine and adjacent compressors. ----walls throughout the cooks line with grease and food splatter. Must clean and maintain all. -----raw exposed stone wall at the basement dry food storage shelving. Must provide smooth, cleanable walls and ceilings throughout the dry food storage and box freezer storage without open cracks, crevices, holes, or openings.

- comments: : 6-202. 11- missing light shields and shield end caps throughout the kitchen. Must replace.

- comments: 2-102. 13- no proof of food handler training or certificates on-premises. Must provide food handler training for all required employees which includes bartenders.

- comments: previous priority foundation violations from 5-12-21 #2509643 not corrected. #38- 6-501. 111--observed 20 to 30 rat droppings in the following areas. Throughout the unused basement bar, under the basement stairwell (storage area) in several storage closets throughout the premises, in main dry storage room and throughout the rear dry food storage behind box freezer, under shelving. Instructed to remove all droppings and sanitize all affected areas. #60---8-404. 13- previous core violations from 3-6-19 report #2268980 not corrected. #47-noted rusty and dirty shelves inside the walk-in cooler at the basement food prep/storage area. Instructed to detail clean, repaint with non toxic food-grade paint and/or replace. #56- noted heavy dirt and grease accumulation inside, on pipes/conduits, and edges of the exhaust hood and filters above cooking equipment. Instructed to detail clean and maintain hood, filters, and pipes/conduits. Priority violation 7-42-090 citation issued.
