- comments: observed no hand washing sink in the rear prep/dishwashing area where employees preparing foods. Instructed to install a hand washing sink accessible where employees can easily wash hands. Priority foundation. Citation issued, 7-38-030(c).
22. Proper cold holding temperatures
- comments: observed various tcs foods such as 30 lbs of raw chicken at 49. 8f, 3lbs of cut tomatoes at 60f, 5lbs of cheese at 63f, and a gallon of whole milk 83f. All tcs foods must be held at 41f or below. Instructed to denature and discard. Priority violation. Citation issued, 7-38-005. Food discarded valued at $100.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed rear prep cooler in use and not turned on, internal air temperature of 52. 0f. Instructed to have on and able to maintain tcs foods at 41f or below at all times. Priority violation. Citation issued, 7-38-005. Prep cooler was turned on at the time of inspection and at proper temperature of 39. 0f by end of inspection.
51. Plumbing installed; proper backflow devices
- comments: no backflow device provided on the ice machine in front prep area. Instructed to provide.
52. Sewage & waste water properly disposed
- comments: observed ice machine not properly draining from point of discharge to disposal. Instructed to provide proper drainage.
55. Physical facilities installed, maintained & clean
- comments: observed food debris on the floors along the walls behind coolers and under equipment. Instructed to clean and maintain.
58. Allergen training as required
- comments: no allergen training on site for all city of chicago food managers. Instructed management that all city of chicago food managers must complete and provide.
