Report date: Nov 4, 202116. Food-contact surfaces: cleaned & sanitized
- comments: noted the chemical dishwashing machine not dispensing chlorine sanitizer after several attempts. No dishes were being washed at the time of inspection. No citation was issued. Instructed to use the three-compartment sink to wash, rinse and sanitize all dishware. Machine tagged held for inspection and must not be used until repaired and c. D. P. H contacted for tag removal. Priority violation.

- comments: all bulk food containers must be labeled with the product common name.

- comments: must not use string as a means of repair for wire hanging utensil holding basket in the kitchen. Must be smooth and cleanable.

- comments: excessive grease on the exterior and interior of all cooks line equipment. Must remove grease, clean, and maintain.

- comments: noted dirty window sill at the rear kitchen dry food storage shelving. Instructed to clean and maintain. ----must not use styrofoam or cardboard as splash guards throughout the kitchen.

- comments: floors under all cooking equipment, three-compartment sink, dish machine with grease, dirt, and food debris. ----noted grease dripping down the wall behind the cooks line from the exhaust hood. Must clean and maintain all. ----must not use cardboard as matting for the floors on the cooks line. Must remove.

- comments: observed soiled mop heads improperly stored inside the utility service sink. Must store inverted.

- comments: noted open cracks and crevices in the walls and the between the floor and wall under the woks cook line. Must seal. ----missing wall tiles at the stairwell to the basement dry storage. Must replace.

- comments: missing light shield end caps throughout the kitchen. Must replace.
60. Previous core violation corrected
- comments: previous core violations from report #2312686 on 9-20-19 were not corrected. #47- remove all cardboard used on all shelves and inside the walk-in cooler and freezer. #47- black crates used for food items in the walk-in cooler must be removed. #49-: observed excess grime on all doors and knobs/doors and reach-in handles of coolers, and freezers, instructed to clean and maintain. Priority foundation violation.
