22. Proper cold holding temperatures
- comments: observed various tcs foods held at inadequate temperatures ranging from 44-48 f. Instructed manager to ensure all cold food is held at 41 f and below. Manager discarded 20 pounds of chicken, 10 pounds meatballs, 5 pounds cut leafy greens, and 15 pounds of pasta ($300) priority violation 7-38-005 citation issued.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed walk in cooler on 1st floor with an inadequate ambient air temperature of 45 f. Instructed maanger to ensure all cold holding units have an ambient air temperature of 41 f and below. Technician arrived on site to service cooler. Priority violaiton 7-38-005 citation issued.

38. Insects, rodents, & animals not present
- comments: observed more than 50 flies throughout facility including in all bathroooms, in kitchen, in basement, in bar area, and in upper floors. Instructed manager to service all areas affected by pests. Priority foundation violation 7-38-020(a) citation issued.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed dirty and worn down gasket in walk in cooler instructed maanger to replace gasket.

49. Non-food/food contact surfaces clean
- comments: observed reach in cooler in bar area and ice cream freezer chest with heavy debris build up on interior instructed manager to clean and maintain.

55. Physical facilities installed, maintained & clean
- comments: observed debris and soil build up on floors underneath and around equipment throughout kitchen. Instructed manager to clean and maintain.
